Broccoli Cheese Casserole

        Ingredients
        
            - 2 hds broccoli florets, cooked al dente and cooled
 
            - 4 oz jarlsberg cheese, grated
 
            - 8 oz mozzarella cheese, grated
 
            - 4 oz sharp cheddar cheese, grated
 
            - 4 T	unsalted butter
 
            - 6 T	unbleached all-purpose flour
 
            - 3 C	milk, warmed
 
            - 4 oz sour cream
 
            - 2 oz goat cheese
 
            - Panko bread crumbs
 
            - Parmesan cheese, grated
 
        
        Options
        
            - mushrooms, sliced, sauteed in butter and garlic
 
            - ham, bite-size pieces
 
            - chicken, cooked, bite-size pieces
 
            - Fontina cheese
 
        
       
      
        Instructions
        
            - Mix the COLD broccoli with the Jarlsberg, mozzarella and cheddar cheeses.
 
            - Create a roux using the butter and flour. Whisk in the milk, then add the sour cream and goat cheese. Season to taste. Cook until the mixture thickens.
 
            - Add the broccoli-cheese mixture to the sauce, pour into a buttered 13 x 9 Pyrex dish, then top with the bread crumbs and parmesan.
 
            - Bake at 350 for 20 to 25 minutes, then broil for 1 to 2 minutes to brown the top.
 
            - Plate and serve.
